* POP Accounts (Post Office Protocol)

Pop accounts download email to a local machine, usually deleting the email from the originating server, Pop accounts are more common and should be used where synchronisation of multiple computers checking a single mailbox is not needed, most users fall into this category.

IMAP Accounts (Internet Message Access Protocol)

IMAP accounts are better for those wanting to check an eamil account on multiple computers, with IMAP, the message never leaves the server and mailboxes are synchronised. For example, if an email is sent from work, accessing it on a laptop while on the road would produce that email in the sent folder of that laptop.

In short, with IMAP, email messages are not stored locally but instead are all synched with the server they originated from, thus giving access to all computers setup with the IMAP account to view email folders and messages in one central place.

One thing to note is that unlike a POP account, email messages are rarely deleted from the server, vigilance to make sure that the online mail area is not "over quota" is needed to ensure that emails being sent to you are not "bounced" back to the recipient. Google Apps provides 7gb of storage, it would be hard to go over, but it's something that needs to be kept in mind.
